Detroit restaurant group Heirloom Hospitality is headed south.

The company is planning a Nashville debut in late 2025 with the opening of its popular steakhouse concept Prime + Proper in the Grand Hyatt Nashville hotel on Broadway.

“Bringing Prime + Proper to Nashville just felt right to us, naturally, given the city’s deep love for hospitality and great food,” Heirloom founder Jeremy Sasson said. “Nashville is seeing a growth in very specific, very niche and quite frankly very good methods of cooking in a variety of cuisines, so we are very excited to bring our dry-aged, wood-fired cooking method to the city’s food scene.”

The restaurant will take over the 7,200 square-foot space that Chef Sean Brock’s record-listening bar and lounge Bar Continental previously occupied. It will incorporate a 185-seat dining room, 14-seat bar, 10,000-bottle wine cellar and large meat dry-aging chamber for in-house butchery.

“Prime + Proper offers an unmatched culinary experience – excellent food, top-notch service and a great atmosphere,” Southwest Value Partners Managing Director Tim Horton said in a statement. “We are pleased to welcome them to Grand Hyatt Nashville.”

Southwest Value Partners is the real estate investment company behind the Grand Hyatt Nashville and Nashville Yards, the new downtown development that includes The Pinnacle music venue.

Sasson said he’s excited about the location’s proximity to Nashville Yards and its easy accessibility.

“For us, the focus was not Broadway,” Sasson said. “We were looking for a space that allowed us to hit two things: a neighborhood that is bustling and attracting the community and a space that would work for our unique concept.”

Prime + Proper is the latest in a long line of businesses migrating to Nashville from other major U.S. cities — including Fishmonger from Atlanta, Husk from Charleston and still-to-come Craig’s from Los Angeles and Pastis from New York.

Its flagship location in downtown Detroit has been included among the World’s 101 Best Steak Restaurants, a list that London-based media group Upper Cut publishes annually. Prime + Proper ranked No. 69 globally.

The Prime + Proper menu offers dry-aged steak tartare, chicken fried lobster, king crab au gratin, a variety of prime steaks, rare cuts, caviar and a raw bar.

When and where Prime + Proper will open

Slated to open by the end of 2025, Prime + Proper will be located at 1000 Broadway inside the Grand Hyatt with a streetside entrance on the corner of 10th Ave.

The restaurant will first open for dinner service seven days a week, eventually followed by the addition of a brunch menu.
